Describe Civerinos in three words
Why the name Civerinos?
A play on my surname which is like an italian slang for “little civiera” which would be my kids or me when i was younger
Where do you see Civerinos in five years?
In neighbourhoods all over the uk and maybe further… The plan is to go beyond what we are doing now and become that “go to” neighbourhood joint that the chains cant compete with…. inclusive, cool as fuck serving the family recipes properly
Out of your selection of pizzas what would you say is your favourite?
Pepperoni first… do you know that when anyone draws a pizza they alway draw a pepperoni? Then the meatball pizza with Nonnas sugo then a few of our new creation which you will see when we launch our SS16 menu this week
Give us three reasons why we should come to Civerinos ?
Because every single person in that building cares so much in every detail of your experience from the food, to the music its hard to not leave happy…. Because we are the small guys doing big things…… because if you go somewhere else for Italian you’ll wish you came here.
If you had to eat anything in the world (other than pizza) for the rest of your life what would it be and why?
Fresh hand rolled pasta in my mothers porcini mushroom and beef sugo…. slow cooked for days. Ive been eating it my whole life so far. And dairy milk… i fucking love dairy milk!
If you had to eat anywhere in Edinburgh for the rest of your life where would it be?
Salvatores fish & chip shop in Marchmont…… I think good family run chippys are overlooked
What is your biggest food vice?
Pizza… not so much of a vice than an occupational hazzard… when we are inventing new recipes the slices go on forever.
Favourite city for food other than Edinburgh?
New York in my food spirit animal….
If you are going out for a drink in Edinburgh (other than Civerinos) where do you head?

You need a coffee, where is the first place in Edinburgh you think of?
The Blackbird…. coffee,,, wifi… good chat… im there most days and when im not there its Ganet & Guga… new gourmet filter coffee is where the party is at right now
